Preparation

  1. How to prepare wok noodles with chicken and vegetables, the recipe for which will be discussed below? First of all, you need to prepare all products for use. The chicken and vegetables are washed well and dried on a paper towel.
  2. First, the carrots are cut into cubes, then the onions are cut into half rings, bell peppers and chicken are cut into strips.
  3. If you use frozen broccoli, then after defrosting it, it should be divided into inflorescences. But when it is fresh, you need to first dip it in boiling, slightly salted water for a couple of minutes.
  4. Thoroughly peel the chili pepper and garlic and chop it as finely as possible.
  5. Any vegetable oil is poured into a special frying pan, the main thing is that it is odorless. When it warms up, add garlic and hot peppers so that they fry a little.
  6. At this time, pour water into a separate pan, throw in the noodles, and place on the stove. Having done this, chicken and carrots are laid out in the frying pan. Over high heat, stirring constantly, they should fry until lightly browned.
  7. After this, broccoli, bell pepper and onion are added. Everything is mixed well and fried for 8 minutes.
  8. During this time the noodles should be cooked. It drains into a colander and goes into the frying pan. Immediately more wok sauce is added. All components are thoroughly mixed and heated for several minutes.
  9. At the end of cooking, the contents of the pan are seasoned with sesame oil. You shouldn't add a lot of it. Afterwards, the pan with the finished dish can be removed from the hot surface.

What can be the filling for wok noodles? Very different. For example, with vegetables and mushrooms. For preparation you will need:

- medium-sized zucchini;

- garlic (two cloves);

— rice noodles (100 grams);

- one onion;

- hot pepper - a small pod;

— champignons - 5 mushrooms;

- Chinese cabbage - 5-6 leaves;

- soy sauce - a couple of tablespoons;

- sesame oil - a tablespoon;

- granulated sugar - a teaspoon;

- small ginger root;

- cilantro - 1 bunch.

How to cook wok noodles at home?

  1. First, vegetables are washed and peeled.
  2. The noodles are placed in boiling water. Then, as soon as the lid on the pan begins to vibrate, it should be removed from the hot surface.
  3. Before adding sesame oil to a heated wok, turn the heat to medium. Then you should immediately put chopped garlic cloves there, as well as diced onion. Stirring constantly, fry for no more than half a minute.
  4. Then mushrooms and zucchini are added, cut into slices of approximately the same size. They fry for about two minutes.
  5. Then finely chopped Chinese cabbage leaves, hot pepper and ginger root are added. Keep in the pan for another two minutes.
  6. The noodles are strained and transferred to the frying pan along with granulated sugar and soy sauce.
  7. After half a minute, chopped greens are added. Everything is thoroughly mixed and the pan is removed from the hot surface.
  8. Cover the finished dish with a lid and leave for a few minutes.
  9. Chinese noodles with vegetables and mushrooms are placed into bowls. Just before serving, sprinkle with peanuts, which must first be fried.

To prepare you will need:

— 200 grams of egg noodles;

- one chicken breast (finely chopped);

- 30 grams of coarsely chopped peanuts;

- 30 milliliters of sesame or peanut oil;

- 2 cloves of garlic, minced;

- about three centimeters of finely chopped ginger root;

- one chopped hot pepper;

- three leeks (take only the white part, cut into strips);

- a large carrot, also cut into strips;

— 70 grams of champignons;

- 100 grams of green peas (you can use both fresh and frozen);

- 200 grams of Chinese cabbage, roughly shredded.

To prepare the sauce you will need:

- 80 milliliters of chicken or vegetable broth;

- 3 tablespoons of soy sauce;

- a teaspoon of honey.

Cooking

  1. The noodles are placed in a separate container and poured with boiling water. After a few minutes, when it becomes soft, you need to strain and rinse with cold water.
  2. Fry peanuts in a separate frying pan.
  3. It is advisable to place cooked vegetables and meat at a close distance from the stove.
  4. Pour oil into a very hot wok pan and immediately add the chicken. Stirring constantly, fry until the ingredient turns brown. After this, place it on a separate plate.
  5. Instead of meat, put chopped hot pepper, garlic and ginger root. Fry for approximately 30 seconds.
  6. Then peas and carrots are added. Let stand until the latter becomes a little soft.
  7. Then add the onion, which cooks for about a minute.
  8. After this, mushrooms are added and kept until they release their juice. The contents of the pan must be stirred all the time.
  9. Then you can add Chinese cabbage and mix all the ingredients thoroughly.
  10. Then the sauce is made in a separate bowl - the components specified in the recipe are combined and mixed.
  11. Place noodles and chicken in a frying pan with vegetables and sauce.
  12. The ingredients are thoroughly mixed and fried for 2 minutes.

My acquaintance with Chinese cuisine happened a long time ago when I was on a business trip in Singapore.

Of course, I forgot a lot of what was there, but the celebration of the Chinese New Year, as well as Bengali and Chinese cuisine, is quite difficult to forget.

Chinese New Year is something unforgettable! Colorful dragons, processions through the streets, trucks rushing here and there, in which a group of people with red armbands with drums and musical cymbals played incessantly.

Singapore itself amazes with its magnificent performances. This is Sentosa Island, with a bunch of attractions, attractions, including the Underwater World, the Light Fountain and terribly expensive drinks. I was able to try several different cuisines there. Most of all, of course, I was struck by Bengali and Chinese cuisines. Bengal - with its CRAZY spiciness (imagine, in a small portion bowl with pieces of chicken there were THREE hot peppers! And the hottest ones!).
Chinese cuisine did not impress me at first, because... it is sold in most eateries and, like any fast food, it was very different from the “classic” one. But when we were invited to a Chinese restaurant, it was a completely different matter. First, they brought us live shrimp, which were doused with cognac (so that we could make sure that the shrimp were alive and fresh when they were later taken away for cooking). Then came a series of dishes. These were very small portions of a variety of dishes, but there were more than ten of them (it is noteworthy that liquid and non-liquid dishes alternated completely unpredictably). And when I was already full, they brought us a huge dish with crabs in an original sauce. With beer, which in Singapore is very, very good, the end of the meal was simply magnificent...

The philosophy of Chinese cuisine is completely different from European cuisine. I won't go into details, but if you go to a restaurant somewhere in Moscow or your city and order top dishes, you will never get an idea about their food. It is a large number of dishes in small portions, a menu compiled in a certain way according to the canons of Chinese cuisine, that provides balanced nutrition, great pleasure from food and is also therapeutic.

However, I want to present you with one dish that is prepared very simply and very quickly - literally 20 minutes, but the result is simply magnificent and if you suddenly have guests, you will greet them with honor

So, Chinese chicken noodles - in 20 minutes
Of course, this is not quite a classic recipe. I saw this recipe in one of the programs, but changed it a little to my taste. I didn't add sugar because... For me, the sweetness of the pepper is enough and I added wine vinegar, although it is better to add Chinese wine. In addition, ingredients like ginger and hot pepper appear differently in different recipes. Usually hot peppers are taken dried.

Chop the green onions across the stems into long 2-3cm pieces, chop the ginger and garlic.

Heat the oil well in a frying pan, add the chicken, fry over high heat until browned, stirring, adding salt, then transfer from the frying pan to a bowl.

Place ginger, garlic and hot pepper in oil, fry for 1 minute, stirring.

Place the carrots in the pan and fry for 5 minutes, together with the previously fried foods.

Add onion, celery, bell pepper to the pan, fry over the same high heat for another 3-4 minutes, stirring constantly.

Combine soy sauce with honey and stir.

Add green onions and Chinese cabbage to the pan, pour in the sauce, add the fried chicken and noodles boiled according to the instructions on the package, stir, heat everything together for another 3-4 minutes under the lid, reducing the heat to low.

Serve the Chinese noodles with chicken hot.

  • In a separate bowl, mix a couple of squeezed cloves of garlic, 0.5 large spoon of honey, 1 large spoon of balsamic vinegar, soy sauce and 20 g of chopped ginger root. Mix the marinade and season the pieces of meat with it. Leave for a couple of hours.
  • Next, you need to prepare the batter according to the following scheme: mix 1 chicken egg with 1 large spoon of starch, add 50-60 ml of water and beat well. Before putting the pork on the fire, pour the batter over it and stir.
  • Then heat the olive oil in a frying pan and start frying the meat. When it's ready, place it on a paper towel and let the excess fat absorb.
  • Chinese rice noodles go well with this dish. We send it to cook, and at this time we ourselves begin to prepare the sauce. To do this, cut the onion and celery into strips, put them in a frying pan, add squeezed garlic (2-3 cloves), 20 g of grated ginger and 1 large spoon of balsamic vinegar, add a little salt.

RECIPE No. 1. Chinese noodles with chicken, onions and bell peppers

This recipe is illustrated with step-by-step photographs. The same one (my first Chinese noodles) that everyone who tried it was completely delighted with. A mixture of vegetable aromas, soy sauce, sweetness from sugar, meat. and, of course, the egg noodles themselves are beyond words!

  1. I put salted water for the noodles in a saucepan on the fire and let it boil.
  2. I chop all the ingredients: chicken into 1 cm cubes, bell peppers into 2 cm slices, onions – finely chopped, tomatoes (sweet) into small cubes, greens – chopped with a knife.
  3. I heat the frying pan very high. Generously pour in vegetable oil (more than half a glass) and heat it up in a frying pan.
  4. I put onions in very hot oil and let them fry in the oil for 1-2 minutes.
  5. I add the bell pepper to the onion and fry it together for 2 minutes (all over high heat).
  6. I add the chicken to the onion and pepper and fry everything together for 3 minutes.
  7. I add tomatoes, add tomato paste (spicy in Georgian, very tasty and aromatic),
  8. I generously add red pepper (1 teaspoon), add 2 tablespoons of sugar, add 5 - 8 tablespoons of soy sauce.
  9. Mix everything together (also over high heat). Simmer with a lid. The sauce must contain liquid, it should not be dry and fried. You can add a few tablespoons of water if it happens that all the liquid from the sauce has evaporated.
  10. Before adding the noodles, I add chopped parsley to the pan.
  11. Meanwhile, the water for the noodles boiled. I put the noodles in boiling water and cook for half the time required for cooking (see the cooking time on the package: if it needs to be cooked for 3-5 minutes, then I will cook for one and a half minutes). I drain the water from the noodles and toss the noodles into the vegetables in the pan. I mix everything properly and keep it in the pan for another minute or two.
  12. When serving, place vegetables and meat on top of the noodles in each bowl.

RECIPE No. 2. Spicy Chinese fried noodles with pork, celery and ginger

These noodles are very spicy. There is adjika, hot red pepper and garlic. Ginger and cilantro add a special aroma.

  1. Place salted water in a saucepan on the fire until it boils (for cooking noodles).
  2. Grind a bunch of cilantro (washed first),
  3. Chop the celery (cut and chop into pieces - chop into thin strips a few millimeters thick),
  4. Ginger root (the volume of ginger should be approximately 1 - 2 fingers) is also chopped into thin slices
  5. Chop the garlic
  6. Chili pepper – minced
  7. 2 onions – chopped
  8. Cut the pork into 1 cm cubes
  9. Throw egg noodles into boiling water and cook for 1-2 minutes. Usually these noodles are cooked for 3-5 minutes, but since we will also be stewing and frying them with vegetables in a frying pan, we cook them less than required. Immediately after cooking, drain the noodles in a colander and rinse with cold water (large amounts) to stop the cooking process. This should be done if you couldn’t figure it out so that the noodles could be placed in a frying pan with ready-made, fried vegetables immediately after cooking. I usually bring the vegetables to condition, and only then throw the noodles into boiling water - and immediately add the noodles to the vegetables in the frying pan.
  10. Pour vegetable oil (half a glass or more) into the bottom of a cauldron (a heavy frying pan with thick walls, or a wok), and heat it up very high.
  11. Place the onions in the oil, after a couple of minutes, ginger and celery, after another couple of minutes - hot pepper, after another couple of minutes - pork, stir and fry it all over very high heat for 10 - 15 minutes until ready.
  12. Throw in the garlic, add chopped tomato and adjika, 3 tablespoons of sugar (without a slide), pour in soy sauce. Stir.
  13. Place the noodles in the frying pan and mix them with the resulting vegetable sauce.
  14. Add chopped cilantro and mix again.
  15. Pour in sesame oil (it acts here as a flavoring agent, it is needed to give a special aroma to the dish. You can do without it).

RECIPE No. 3. Fried Chinese noodles with shrimp

Recipe from a real Chinese woman - an experienced chef of Chinese cuisine. This recipe is very healthy, the author of the recipe (her name is Ling) specializes in healthy cooking.

  1. Cut the onion into thin half rings.
  2. Chop the carrots into thin strips (straws), 5 mm each,
  3. Chop each clove of garlic in layers (1-2 mm), almost transparent, but wide.
  4. Salt peeled raw shrimp.
  5. Boil water for the noodles, add the noodles, cook for 1 minute, drain through a colander, pour cold tap water (plenty) to stop the cooking process, pour in a little oil (while the noodles are in the colander), stir. We add oil to prevent the noodles from sticking together.

In fact, there are no special secrets in boiling Chinese noodles, and the method of heat treatment is practically no different from preparing pasta that is familiar to us. So, the whole culinary process looks like this:

  1. Soak the noodles for 15-30 minutes in hot water. The time depends on the variety and is usually indicated on the packaging.
  2. Boil water in a saucepan, add salt and place noodles in it.
  3. Cook the noodles according to the instructions. This usually takes up to 10 minutes. Rice noodles are cooked for 2-3 minutes.

Noodles with chicken in Teriyaki sauce

Let's prepare noodles with chicken and vegetables in Teriyaki sauce. This dish has a rich color and taste. And the green onion will give it an incredible aroma.

Compound:

  • 150 g chicken fillet;
  • 200 g Chinese noodles;
  • carrot;
  • small zucchini;
  • bell pepper;
  • green onion feathers;
  • sesame seeds to taste;
  • 3-4 tbsp. l. Teriyaki sauce;
  • olive oil;
  • salt and spices.

Preparation:

  • Let's prepare the products we need so that everything is at hand. Wash the vegetables and fillets and dry them.

  • Cut the chicken into small cubes.
  • We chop the green onion feathers into rings, and clean the remaining vegetables and cut them into cubes. To make the dish not only tasty, but also beautiful, try to cut the vegetables into equal pieces.

  • Boil Chinese noodles in slightly salted water.
