I made these pancakes for the first time and was pleasantly surprised by the result - the pancakes turned out to be a beautiful bright yellow color, with a delicate banana flavor and a slight sourness, which is very tasty. We ate these pancakes with condensed milk and sour cream, and also greased them with melted butter.

Pancakes with bananas

To make banana pancakes you will need the following ingredients:

  • Milk – 200 ml,
  • Water (boiling water) – 200 ml,
  • Bananas (ripe) – 2 pieces,
  • Eggs – 3 pieces,
  • Granulated sugar - 1.5 teaspoons,
  • Salt - ½ teaspoon,
  • Wheat flour – 200 grams,
  • Vegetable oil (refined) – 5 tbsp. spoons

Cooking process:

In a separate cup, beat the eggs into a strong foam with the addition of salt and granulated sugar. Then add milk, which should first be warmed to room temperature.

Add sifted flour to the resulting mass and mix thoroughly until smooth. Pour a glass of boiling water into the pancake dough, stirring it constantly to prevent lumps from forming.

Now you need to peel the bananas and grind them with a blender or mash them with a fork until pureed (I left small lumps, which I really liked later). Add banana puree to the pancake batter and mix. At the end, add vegetable oil and mix everything again.

Cover the cup with the dough with a napkin and leave to rest for 15 minutes so that the gluten swells.

At this time, heat the frying pan and grease it with vegetable oil. Using a ladle, pour the required amount of batter into the frying pan and bake the banana pancakes on both sides until a beautiful golden color.

Grease the finished banana pancakes with melted butter, we used ghee, it is very aromatic and goes well with hot pancakes. As I said, I left small lumps of banana in the puree, and they appeared periodically in the pancake, this gave the pancakes an unusual, pleasant taste.

To make the treat truly healthy, you need to take the freshest ingredients. Eggs - preferably homemade, and bananas - only ripe, yellow ones.

Since our dough will be quite liquid, we need it underneath. The ideal option is a pancake maker with a non-stick bottom coating.

  1. First, peel the banana from the top yellow peel and cut it into small pieces.
  2. Now the aromatic pulp, rich in potassium, needs to be turned into puree. This can be done using a blender. If there is no such unit on the farm, you should use the “grandmother’s” method and turn the ripe fruit into a vitamin mush using a regular fork.

Let's take care of the eggs and first separate the yolks and the transparent protein mass.

  • You need to lightly hit the egg with a sharp knife to get a neat split line.
  • Holding it with two thumbs, we “open” the egg and immediately tilt it so that one of the halves of the shell is at the bottom.
  • The yolk will “fall” into it, like into a small saucer. Place it in a separate container and repeat the procedure with another egg.
  • Using a mixer, turn the yolks and egg whites into foam, whisking separately.

Then pour everything into the banana mixture and mix everything well. The result should be a light and airy dough.

Now lightly grease a well-heated frying pan with oil (you can grease it with a silicone brush) and carefully form the pancakes with a tablespoon.

Then you need to knead the dough with your hands for 10-15 minutes. Then wrap the dough in plastic and put it in the refrigerator for a couple of hours. When the dough has settled, it must be divided into 15-20 balls. Lubricate them with palm (olive) oil and cover with a damp cloth to prevent them from drying out. Cut bananas into thin rings. Rolling out dough balls is easier on a silicone mat. The pancakes should be very thin (transparent). Fry them in a hot, greased frying pan. While one side is frying, bananas are placed on top in the center. The edges of the pancake are wrapped like an envelope and turned over so that the other side is fried. Cut the crispy envelopes with a knife into 9 equal parts. Pour condensed milk on top and sprinkle with powdered sugar. Pancakes are served piping hot on paper plates with wooden skewers.

If you put banana filling inside the pancakes, the taste will be magical. To prepare them, you can take any classic recipe. To prepare pancakes with banana filling, start with the dough. You need to take 1 liter of milk, 5-6 eggs, 2 tbsp. l. sugar, a pinch of salt, 100 ml of vegetable oil and flour as needed. Set the pancake batter aside. For the filling you will need: 5 bananas, 50 g butter, powdered sugar. Remove the peel from the bananas. Cut into circles of small thickness. Melt butter in a saucepan and place bananas in it. Beat the eggs and bananas in a blender, add lemon juice. You should get a voluminous air mass. Next, grease the frying pan with vegetable oil and heat it up. Fry the pancakes in 2 stages. Pour a spoonful of batter into the center of the pan and cover with a lid. After a minute, pour another spoonful of batter on top, cover again to bake the pancake. Then turn over to the other side. It is more convenient to flip pancakes with two forks.

The recipe does not include sugar. It is important to take the ripest bananas. Their maximum ripeness can be achieved if stored together with apples outside the refrigerator.

  • Sour cream 100 gr
  • Sugar 100 gr
  • Water 450 ml
  • Vegetable oil 4 tbsp
  • Flour 300 gr
  • Salt 1/3 teaspoon
  • Soda 1 teaspoon
  • Banana 1 piece

Beat sugar with sour cream. Add water and salt. Mix.

If desired, you can add cottage cheese to these pancakes.

Add vegetable oil. We extinguish the soda with vinegar and add it to the dough.

Recipe 3: Thai Banana Roti Pancakes

They are traditionally called pancakes for their shape, similar to Russian pancakes. However, they are more like a flatbread with filling. You can fill them with any exotic fruit.

  • 300 g flour
  • 150 ml. water
  • 50 ml. coconut milk (due to lack of availability, I used cow's milk)
  • a pinch of salt
  • 1 cup vegetable oil
  • 4 overripe bananas
  • condensed milk
  • dark chocolate

In the evening, mix flour, water, milk and salt into a dough similar in consistency to dumplings, but softer.

That's it.

Tear off a piece at a time and form 6-8 balls with a diameter of 3-4 cm. Place them in a plastic container with a lid, fill with vegetable oil, and put in the refrigerator overnight.

In the morning, peel and cut the bananas. Place it next to the stove. We also put condensed milk with a spoon there. You will need to start quickly.

Place the largest frying pan on high heat, lightly sprinkle with salt (I did this procedure before each pancake).

Lubricate the countertop with vegetable oil (you can use the same oil in which the dough was proofed), lay out a ball of dough, and turn it into a flat cake.

And then, using your palm from the center to the edges, carefully stretch the dough into a flat cake.

Place the finished pancake on a hot frying pan, quickly place chopped bananas in the middle and pour over condensed milk.

Using two wooden spatulas, roll it into an envelope.

Immediately turn over to the other side and fry for several tens of seconds.

  • water 100 milliliters
  • salt 1/3 teaspoon

Filling for one pancake

  • banana 1 piece
  • egg 1 piece
  • condensed milk
  • melted chocolate
  • butter for each pancake 5-10 grams
  • vegetable oil (optional) for frying

Sift the flour, collect it in a mound and make a hole in it. Beat in the egg and add salt.

Pour in water, whisk the egg and water and start kneading. First, mix with a spoon or fork. Gradually add flour from the edges. As soon as the dough begins to form, continue kneading by hand.

The dough should come together into a ball and there should be no flour left. Everyone's flour is different, so you may need more or less flour. Add either water or flour.

Place the dough on a dry table and continue kneading by hand. Mix for 5 minutes. We no longer add flour.

The dough will be soft, silky to your hands and will not stick to the table.

I divided the dough into 7 parts. I thought this was the best option. You can have more or fewer parts. It all depends on the way you bake these pancakes.

We round each piece.

Pour half the vegetable oil into the bowl.

We “bathe” each piece of dough in oil and place it in the same bowl.

Fill the dough with the remaining oil. This is the main secret of the dough for these pancakes.

Cover the bowl with cling film and leave the dough at room temperature for about an hour. There is no need to leave it for longer or shorter time. Otherwise, the dough, if left for less time, will not have time to relax and will be difficult to stretch. And if you leave it for a longer time, the dough will weaken greatly and will be very soft, which will also make stretching difficult.

Cut the banana.

Wash the egg and add it, breaking it, to the banana.

Mix. This amount should go for one pancake. I still had a third left. I added a banana and an egg to it and used half for the next pancake. So for 7 pancakes I used 4 bananas and 4 eggs.

I baked (or fried, whichever you prefer) pancakes on an inverted baking sheet, which I placed on a gas stove with the burners turned on. I did not grease the baking sheet, although this is done according to the rules.

Take out one piece of dough and grease the table with oil. We put a piece of ivy on the table and begin to pull it out. We work carefully.

Stretch the dough into a thin pancake. If the dough breaks somewhere, it’s not at all scary.

As a result, we should get this thin dough.

Transfer the dough to a hot baking sheet. Place and level. The dough is already starting to fry.

Pour the filling into the middle.

We tuck the ends towards the center and fry on both sides until golden brown. The fire should not be high for the filling to cook well.

Remove the pancake from the baking sheet and grease it with butter. Actually, butter is added during frying, when the pancake is turned over for the first time. But I decided not to add any oil when frying.

Cut the pancake into small pieces, pour condensed milk and melted chocolate over it. And we serve it right away.

Recipe 5: Banana and Chocolate Pancakes

  • chicken eggs - 2 pcs;
  • granulated sugar - 2 tbsp;
  • salt - 0.5 tsp;
  • milk - 2 tbsp;
  • flour - 2 tbsp;
  • water - 1 tbsp.;
  • milk chocolate - 100 gr.;
  • banana - 1 pc.;
  • vegetable oil - 2 tbsp.

First you need to prepare pancakes, in which you need to wrap the banana and chocolate filling. Break the eggs and add salt and sugar. Beat well.

Then add vegetable oil and milk, mix well.

Then add flour and mix thoroughly, the dough turns out thick like pancakes. Then pour in a glass of boiling water and mix thoroughly.

The dough should be left to rest for about an hour. Then bake the pancakes as usual on both sides.

Melt the chocolate in a water bath to the desired consistency, it melts quickly and as soon as half is melted, I turn off the stove and thoroughly stir the chocolate until smooth.

While the chocolate is still hot, add half a banana.

Roll the pancake into a tube, decorate with chocolate and powdered sugar.

Children really like these pancakes; banana and chocolate go well together. Tasty and healthy.

  • milk 800 ml
  • sugar 2 tbsp.
  • flour 450 g
  • egg 2 pcs
  • baking powder or soda 1 tsp.
  • butter 4 tbsp.
  • bananas 3 pcs
  • natural honey 1 tbsp.
  • vanilla sugar to taste

Break 2 eggs into a deep container (in a saucepan, for example), and beat with a mixer. Add sugar and continue beating until bubbles appear. Add flour and baking powder. We look at the consistency of the quantity, it should be like sour cream. For now, put the dough aside.

Now let's start filling. Prepare the ingredients - ripe bananas (3 pieces), natural honey (1 tablespoon, otherwise very sweet), vanilla sugar, a little butter.

Let's prepare the filling. Be sure to do this BEFORE preparing the pancakes themselves. First, cut the bananas into slices, about half a centimeter thick. Heat the drain in a frying pan. butter, add honey and vanilla sugar. Heat the mixture a little, add bananas. “Simmer” for about 3 minutes.

Now let's prepare the pancakes ourselves. Before cooking, add 3-4 tablespoons of butter (melted) to the dough, then add butter only for the first pancake. So, pour some dough into the frying pan and fry it. Turn the pancake over while it is cooking on the other side and add the filling.

Place it so that it fits into a quarter of the pancake. The rest can be poured with the syrup that should have appeared when preparing the filling itself. When we have laid out the filling, we fold our pancake in half. Then in half again. As a result, there should be a quarter of the pancake left.

Place the finished pancakes on a plate. You can pour chocolate on top. You can also serve ice cream with these pancakes. Enjoy your tea!

  • a pair of eggs
  • a glass of milk
  • five bananas

Transfer the banana mixture into the dough.

Beat it again with a blender. If there are very large pieces of bananas left, they will be crushed a little.

Fry the pancakes on both sides in a hot frying pan until golden brown.

What can I say: the pancakes turned out unusual, plump with pieces of bananas inside. I was afraid that they would not lag behind the frying pan, but nothing like that happened.

Despite the presence of bananas in the dough and the thickness of the pancakes, they turned over just fine.
