How to open a brewery business. What equipment to buy for a mini-brewery for business. Total costs and estimated profit of the project

home / Repair

Beer remains one of the people's favorite drinks and is popular under any circumstances. The beer business is profitable and there are more and more breweries and small factories for the production of beer according to various recipes.

Opening plan

So, consider a free ready-made example of a business plan for opening a small brewery.

Organization of beer business

This business is profitable due to the taste advantages of fresh beer over those that are bottled and intended for long-term storage. Provided that the beer of local producers is of good quality, it is certainly more preferable for most bars, cafes, restaurants. Before opening your own business and buying a mini-factory, you should decide on the volume of future production. There may be mini-breweries of the following capacities:

  • 50-500 l/day (micro-brewery);
  • 500-15000 l / day (mini-brewery).

The most popular plants with a capacity of 1 thousand. l / day.

The business idea for opening a mini-brewery needs to purchase special equipment, the choice of which is quite large.

How to choose for equipment

You can purchase equipment from well-known companies, but you can also from Russian, Czech or Chinese manufacturers. Naturally, prices differ significantly. So, for example, if the equipment with a capacity of 1000 l / day of the company from Germany "Integral-Geha" costs $650 thousand, then the Russian company CJSC "Moscon" offers equipment for $170 thousand. The best option would be to purchase a model of good quality at an inexpensive price. If you want to get smaller volumes, you can purchase equipment with a capacity of 80-100 l / day, which will cost about 900 thousand rubles.

A technologist is required to control the brewing process. The business owner should also learn the features of brewing. Production is divided into stages:

  1. Wort preparation.
  2. Yeast fermentation.
  3. Fermentation.
  4. When pouring beer into glass containers - filtration and pasteurization.

It should be noted that it is more profitable to deliver beer in kegs. It is also more profitable to produce beer not on malt, but on malt extract. Beer is not subject to mandatory certification. It is only required to obtain the conclusion of the SES.

Raw material

Raw materials for beer production: water, brewer's yeast, hops, malt. Soft water provides the best taste, water quality improvement equipment may be required.

Raw materials can be bought:

  1. Import from abroad (profitable for a large batch).
  2. Purchase from a hardware supplier.
  3. Purchase from large breweries.

It is possible to purchase equipment for bottling beer at breweries, the cost of one set is approximately $600.

An initial investment of 2 million rubles is required, which will bring a monthly income of up to 200 thousand rubles.

Opening costs

You can start a business with $2500. A paper issue: preparation of the charter and memorandum of association, certification by a notary, state registration, registration with tax and statistical authorities. This will take about $300. Then you will need permission from the SES, state fire supervision, energy supervision and from the housing office (water release and discharge).

Brewery licensing is not required for the production of beer, but in some regions you may be faced with the need to obtain a license. Therefore, be sure to contact the Office of Trade and Consumer Market Coordination on this issue. Brewery products are excisable goods and are subject to a fee of up to 400 rubles. from a litre.

It is obligatory to obtain a hygienic certificate for the brewery in the sanitary and epidemiological supervision.

The second stage: the purchase of equipment. Usually everything you need to produce a microbrewery comes with a minibrewery. For the production of 50 l / day, an area of \u200b\u200b30 sq.m is enough, 200 l - 60 sq.m. One worker can serve such equipment.

The technological process for the production of 50 liters requires 2-4 cans of concentrate, 14 g of yeast, 2 kg of sugar.

The organization of a microfactory requires $2500-7000. 40% profitability and approximately two months for payback.

About 1.5 million rubles are needed to organize the production of 100 l / day. starting capital. The money will be spent on the purchase and installation of equipment, certification, permits and preparation of the premises.

Paper design is similar to a microfactory. Area: more than 60 sq.m. Personnel: manager, specialist cook, electrician, accountant, manager, cleaner.

Raw materials are best purchased from large breweries.

The choice of equipment is even greater than for micro-factories. Inexpensive domestic equipment can be bought for 1-2 million rubles. A filling machine for kegs costs 150 thousand rubles.

The organization of the brewery requires about 1.5 million rubles. 40% profitability, payback period from six months to two years. Monthly income up to 600 thousand rubles. (the price of one mug of beer is 100-200 rubles.)

In addition, about 4.5 million rubles are required in the first year. investments, and the income for the year, including taxes, will be 2.5 million rubles. And only next year the income will reach 5 million rubles.

The next stage for the development of a microbrewery may be the opening of its own English pub, Czech pub or German Kneipp.

The brewery is a rapidly growing and promising business that is gaining more and more popularity in Russia. Our country is one of the leaders in beer consumption. The demand for this product is high at any time of the year. In restaurants, cafes and bars, visitors prefer live beer. Therefore, most establishments are constantly in search of a local producer of a quality drink.

With proper construction of the business, you can start making high profits from the first months of work. In order to take into account all the nuances, it is necessary to draw up a competent business plan.

This project is designed for a city with a population of more than one million people. Over time, there is potential to scale the business.

Key Success Factors:

  • High demand for the product;
  • Product quality;
  • Affordable prices;
  • Minimal risks;
  • Affordable entry price.

The amount of initial investment is 1,882,800 rubles.

The break-even point is reached on the 4th month of operation.

Payback period - 20 months.

The average net monthly profit is 92,500 rubles.

2. Description of the business, product or service

In this business plan, we will consider opening a brewery.

Beer is a low-alcohol beverage obtained by alcoholic fermentation of malt wort (most often barley-based) with brewer's yeast, usually with the addition of hops.

The production range will include up to 10 types of beer, as well as drinks such as kvass, fruit drink, lemonade, cider, mead, which are also prepared on brewery equipment.

Live beer in the CCT (cylindrical-conical tank) can be stored for up to 3 months. During this time, you will be able to sell products and avoid losses.

The area of the premises is 100 m2, of which 50 m2 is a production workshop, 30 m2 is a warehouse for finished products, 20 m2 is a staff room, a utility room and a toilet.

The staff includes 7 people: manager, brewer technologist, cooks, handymen, sales manager.

Working hours: 8:00 - 20:00.

3. Description of the market

The target audience of breweries is small bars, cafes and restaurants that can and are ready to offer their customers exclusive beer.

Every year, customers of establishments become more and more selective, so a high-quality product will allow you to attract a good flow of regular customers.

Beer production in our country 2012-2016 fell, as can be seen from the graph. (Rosstat)

Dynamics of beer production in the Russian Federation, mln.

Also, during these years, beer consumption also falls from 1017 to 840 million deciliters. Therefore, in this area you will face high competition. However, having withstood all possible obstacles and occupying its niche, there is a potential for high profits.

4. Sales and Marketing

5. Production plan

The goal of the project is to open a brewery, maximize profits, scale.

Business registration

The first stage is the opening of LLC (OKVED - 11.00 "Production of drinks"). Next, you need to register with the tax office. The most profitable taxation system in this type of business is the simplified tax system (income - expenses).

Registration of necessary documents:

  • permits from the fire service, SES, housing and maintenance services for the discharge and runoff of water, sewerage.
  • health books for all employees;
  • lease contract;
  • registering a cash register;
  • contracts for: garbage disposal, deratization and disinfection;
  • accounting support;

Location selection

  • Production zone (within the city, or up to 20 km from the city)

Room characteristics

  • Area: kitchen - 20m2, hall for visitors - 20m2;
  • Availability of electricity, water, sewerage and ventilation systems;

Equipment

The choice of equipment for a brewery is an important process, since it is the purchase of equipment that accounts for most of the investment. Carefully study the offer on the market. The manufacturer must have a reputation for reliability and quality, as well as a long market life. Buy equipment for a turnkey brewery with a capacity of up to 400 l / day. For a start, this volume is optimal.

6. Organizational structure

For the successful opening and existence of your business, you need to assemble a reliable team that will work smoothly and ensure the uninterrupted production of quality products.

This project requires a team of 7 people:

  • Manager;
  • Technologist;
  • Cooks / line operators - 2 people;
  • Product Sales Manager;
  • Handyman - 2 people.

Accounting is outsourced.

At first, the business owner can act as a manager in order to establish the process as clearly and efficiently as possible. The technologist must have more than a year of experience in the food industry (including the production of beer drinks).

General requirements for employees:

  • Responsibility;
  • Honesty;
  • Stress resistance;
  • Reliability;
  • Attentiveness;
  • Ability to learn.

The wages of employees are fixed.

To determine the most profitable idea for a business, it is necessary to analyze the needs of the client. Beer production as a business is a pretty good idea to start your own business. In terms of taste, fresh draft beer significantly outperforms bottled beer. Restaurants and cafes can become clients of high-quality home-made live beer.

Before finally deciding on the opening of a beer business in Russia, it is necessary to calculate the expected production volumes.

Eg:

  • a small brewery with a capacity of 55–550 l/day;
  • mini-brewery with a capacity of up to 15 thousand l / day.

The most profitable, experts say, is to open an enterprise with a product capacity of up to 1 thousand liters per day.

Organization of a mini-brewery

How to open a mini-brewery? Before organizing your brewery, you will need to find a room for making a drink. It should be spacious, as an exception - a home brewery, which does not provide for the production of large volumes of product.

Theoretically, this can be organized, but it turns out to be unprofitable in terms of monetary investments.

To form a full-scale beer business, you need to produce approximately 100 liters of beer per day. Regarding the registration of a case, it is difficult to unequivocally determine the required set of documents, since the production of beer in some regions is subject to licensing, while in others it is not necessary. Therefore, before starting your own beer business, it is recommended to consult an experienced lawyer.

Business registration

  • If you want to organize an independent mini-brewery in order to sell your own beer, you need to legally register your own business with the relevant authorities: tax, SES, PB.
  • First of all, it is necessary to determine the legal form of the future enterprise. For a home beer business, the most optimal case is an IP (individual entrepreneurial activity). The process of paperwork in this case is carried out quite quickly, and a simplified taxation system is applied to the entrepreneur.

* Calculations use average data for Russia

The beer business is not always a business for large investors. You can start your "beer" business with $2,500 by buying a microbrewery.

Owning a brewery is real, but in order to implement a business idea, it is first of all necessary to deal with the paper side of things. Preparation of the charter and constituent agreement, notarization of constituent documents and signatures, state registration, registration with statistics and tax authorities - everything will cost 200-300 USD. After registration, the legal registration of the premises chosen for your brewery begins. To do this, you need to obtain permission: from the sanitary and epidemiological station for the installation and launch of equipment, from the state fire supervision, from the energy supervision, from the housing office for the supply of hot and cold water, for the discharge of waste water into the sewer.

The next step is licensing. In the case of the production and sale of beer, licensing is not provided for, but in Moscow, for example, it is necessary, because the government issued a decree "On improving the system of licensing activities in the territory of Moscow", which includes activities whose licensing at the federal level has been canceled, and this means you need to get a license. This can be encountered in many regions, including Chelyabinsk. To do this, you must contact the Office of Trade and Coordination of the Consumer Market.

Beer is an excisable product, therefore, there is an additional tax on it - 15%. The administrations of some regions and republics follow the law "On state regulation of the production of ethyl alcohol and alcoholic products", containing more than 1.5% alcohol, are subject to licensing and are subject to an appropriate fee of about 350-400 rubles per liter.

An obligatory step is obtaining a hygienic certificate for products. This document is issued by the local sanitary and epidemiological supervision on the basis of the results of a hygienic inspection and examination of regulatory documentation that defines the requirements for products, their production and use. It is important that if you do not agree with the decision of the territorial center of the State Sanitary and Epidemiological Supervision to refuse to issue a hygiene certificate, this decision can be appealed to the State Committee for Sanitary and Epidemiological Supervision of the Russian Federation.

This is where the paperwork ends.

The next step is the purchase of equipment. All the necessary equipment (primary fermentation vessel, process vessel, set of laboratory equipment, transfusion system) is usually supplied with the microbrewery. As for the area of the premises of the future brewery, for a plant with a capacity of 50 liters of beer per day, 30 square meters are needed, for 200-60 square meters.

Ready-made business plan for organizing a craft brewery

Overview of the brewing market

Financial calculations: microbrewery with a capacity of 1000 liters per day

Own business: opening a draft beer store

There are no problems with finding personnel, one person can serve the microfactory.

The technological process at the microbrewery is very simple - sugar syrup (water with sugar) is prepared, sugar syrup is mixed with concentrate, yeast is added to the wort cooled to +18 -20 degrees, and the fermentation process begins, which lasts about a week, the resulting beer is pumped into kegs, add a little more sugar for secondary fermentation. After 5 days, the beer is placed in a cold place for final maturation for 2-3 weeks, depending on its variety. The longer this process, the better the beer.

Ready-made ideas for your business

A microbrewery for the production of 50 liters will require 3.4 (2 cans) of concentrate, 2kg of sugar, 14g of yeast. And for 200 liters - 15-20 kg of concentrate, 10-12 kg - sugar, 70g - yeast.

To organize such a micro-factory, from 2500 to 7000 USD of initial capital is required, the profitability is about 40%, the payback period is about 2 months.

Organization of a mini-factory.

Your own mini-format brewery will initially require significant financial investments and costs. In order to organize "home" production with a capacity of up to 100 liters of beer per day, at least 1.5 million rubles of start-up capital will be required. This money will be used for the purchase and installation of equipment, preparation of premises, certification, permits.

Paperwork is no different. But the area for your brewery will need more - more than 60 square meters, and here there are a number of requirements for the premises that must be observed: the presence of a strong waterproof floor, a ceiling height of at least 3 m, the presence of plumbing, electricity and gas. Various facilities will also be required for the storage of raw materials and for personnel. But not the last role in choosing a room and its location is the close proximity to the consumer, since it is not recommended to store the prepared beer for a long time.

As for the staff, in this case one employee is not enough. A microbrewery should have a specialist brewer on its staff, because the taste of beer depends on him no less than on the quality of raw materials, an electrician (he can be like a guest), a sales manager, an accountant, a cleaning lady and, accordingly, a manager.

The next moment is raw materials: malt, hops, water, yeast. Hops and malt, as a rule, are imported by Russian brewers. It is better to grow yeast on your own, because during transportation, the yeast will definitely get sick, which will certainly affect the taste of beer. The best way to purchase raw materials is from large breweries.

And finally, the equipment. Its choice is significantly greater than for a microbrewery. There is a certain list of technological and auxiliary equipment of a minibrewery: a malt crusher, a mash-wort brewer, a filtration apparatus, a water-heating apparatus, a pump for mash and wort, hot water, an electric steam generator, a hydrocyclone apparatus, a heat reservoir, dispensing tanks, pumps for young and finished beer, refrigeration unit with ice maker, fermentation tanks, yeast vats, control panel. Mini-breweries of reputable European firms are more expensive than domestic ones, and Eastern Europe (primarily the Czech Republic) is sometimes able to offer equipment no worse than Western European, better than domestic, but at prices much lower than those of the Germans or Austrians. It is interesting to note that Russian equipment is still the most popular in Russia. The cheapest, but at the same time quite good equipment for breweries is produced at the Miass Machine-Building Plant, a complete set
A set costs about 1.7 million rubles, but a minimum set worth 1 million rubles is enough for your own brewery. A filling machine for kegs can be purchased for 150 thousand rubles. In the production of 100 liters per day, 20 fifty-liter kegs will be required weekly, the purchase of which will cost 20 thousand rubles.

The initial investment in the organization of a minibrewery will be from 1.5 million rubles, the profitability is about 40%, the payback period is from 6 months to 2 years.

Monthly incomes can amount to 600,000 rubles (the price of a mug of such beer is 100-200 rubles), provided that the entire batch is fully distributed and there is no rejection. At the same time, it should be taken into account that it will take at least six months to organize production, and the enterprise will work “idle” for two months.

So, in the first year of operation, the enterprise will require a total investment of 4.5 million rubles, and the income after tax for the same period will be 2.5 million. But next year, revenues should amount to more than 5 million rubles. With unchanged components in the second year of operation, the enterprise will begin to break even, and finish the third year with a profit.

The direction for the further development of his brewery is the opening of his own pub like an English pub, a German Kneipp or a Czech pub.

Opening your own brewery is a great opportunity not only to do what you love, but also to earn pretty good money. With proper planning, a private brewery is a virtually risk-free business, and the volume of the brew produced can be scaled up in accordance with the level of demand and the experience of the owner.

Most mini breweries work on the principle - "I will open a brewery, buy raw materials and sell." This is fundamentally wrong, because first you need to decide on the mechanism for selling beer, since the key to the success of any business is competent marketing of the products.

In total, there are two main production technologies - a full cycle and brewing beer from malt concentrate.

We recommend choosing full-cycle technology, because only in this case you can fully control the production process and get the opportunity to extract much more profit than when brewing beer from concentrate. Our experts will provide the necessary information, calculate profitability and help you open a brewery, buy all the necessary equipment and start production.

Due to the possibility of opening a full-cycle production, you can independently choose the types of beer produced, as well as make it according to your own unique recipes.

All this is the key to a successful business, as it allows you to feel the demand and needs of customers most subtly. Depending on the volume of beer that the brewery produces, the price of equipment may differ several times. You can start with a small volume of beer produced per day, for example 500 liters per day, and gradually increase, while gaining experience and the necessary knowledge and connections in the industry.

For the sale of beer in the catering chain, sealed kegs are used, which are equipped with a sealed lid and allow you to abandon the costly packaging of products. For the production of bottled beer, a special packaging line is needed, which will be indispensable when working with retail chains.

Live beer is the main product of the microbrewery. The prices for its wholesale and retail sales are much higher than the cost, which allows us to count on a good profitability from the activity of the microbrewery. To understand the approximate revenue from this type of business, it is necessary to calculate the cost of purchasing equipment, overheads and staff salaries. At the same time, one can rely on the fact that the cost of production will be 2 times lower than the minimum wholesale price at which the brewery usually sells it, while retail prices for this beer will be even higher.

How to open a brewery?

Beer production is one of the most profitable business lines. Both large productions and small private breweries operate in this niche. The promotion is going well, for a middle-class entrepreneur it is quite a worthy turnover.

Lines of business

Those who decide to open a business, but do not know how to open a brewery, need to take into account the nuances.

In this market segment (brewing), there are two types of activities that will tell you how to open your own brewery from scratch:

  • micro-brewery with a production volume of 50 to 500 liters of daily output;
  • mini-brewery, the volume of which is larger and ranges from 500 to 15,000 liters of daily norm.

There is a division of business by performance:

  • beer for restaurants;
  • beer on an industrial scale.

Technology

Brewing technology is no less important, it will tell you how to open a mini brewery:

  • brewing can be carried out using full cycle technology;
  • brewing is built on a shortened cycle.

The technology is chosen depending on the scale of production. It is possible to conclude a contract with large restaurants or pubs. For economic development of business, a shortened path is chosen. Small production is easier to place, it requires a small area. Equipment costs are also not so scary.

The purchase of equipment is one of the important stages in building a business when the question of how to open a private brewery is being decided. You need to correlate the scale of your production with the cost of equipment.

Domestic technologies are cheaper. You can also rely on foreign ones, for example, many note the simplicity and quality of Czech brewing equipment.

Human resources are essential to running a successful business. A small brewery needs only a few people, but they must be specialists or people who can work without an overseer. For this, you can contact the employment center.

And finally, the most important point - raw materials. Good beer requires quality ingredients:

Many try to create their own small workshops, but not everyone succeeds, as many do not know how to open a brewery in a private house. Perhaps the point is the inability to predict or the wrong investment actions. But the costs must pay off. Beer will remain a profitable business with us for a long time to come. Beer production, unlike kvass, is not seasonal.
